Blue Cheese Stuffed Burger

Ingredients:
1/2 cup finely chopped onion
1 pound of ground beef
3 tablespoons dry breadcrumbs
2 tablespoons water
1 egg white, lightly beaten
1/4 cup (1 ounce) crumbled blue cheese
1/4 cup fat-free sour cream
4 (1-ounce) English muffins, toasted
4 lettuce leaves
4 (1/4-inch-thick) slices tomato

Instructions:
Coat a small nonstick skillet with cooking spray; place over medium heat until hot. Add onion; saute 5 minutes or until tender. Remove from heat; let cool. Combine onion, beef, breadcrumbs, water, and egg white in a large bowl; stir well. Divide mixture into 8 equal portions, shaping into 1/2-inch-thick patties. Spoon 1 tablespoon cheese into the center of 4 patties; top with remaining patties. Press edges together to seal.

Prepare grill. Place patties on grill rack coated with cooking spray; grill 4 minutes on each side or until done.

Spread 1 tablespoon sour cream over top half of each muffin, and set aside. Line bottom halves of muffins with lettuce leaves; top each with a tomato slice, a patty, and top half of muffin.

Sausage & Cheese Egg Puff

Ingredients:

4 large sliced mushrooms

1 tablespoon butter

1/2 cup all-purpose flour

4 cups shredded monterey jack cheese

1 cup crumbled pork or turkey sausage (fully cooked & drained)

2 cups shredded cheddar cheese

4 chopped green onions

1/2 cup butter

10 eggs, lightly beaten

Instructions:

In a skillet, saute the mushrooms and onions in 1 tablespoon butter until tender. Set aside.

In same skillet brown and crumble the sausage. Drain well on paper towels.

In a large bowl, combine the flour, baking powder and salt.

In another bowl, combine eggs and cheeses.

Melt remaining butter; add to egg mixture. Stir into dry ingredients along with sausage crumbles and mushroom mixture.

Fill greased muffin cups three-fourths full.

Bake at 350 degrees for 35-40 minutes or until a knife inserted near the center comes out clean.

Carefully run a knife around the edge of each muffin cup before removing.

Panzanella Tomato Salad

Ingredients:
2-3 Tomatoes
1 Red Onion
Your favorite Vinegar Base Dressing
1/2 loaf of French Bread
1 cup of Feta Cheese

Instructions:

Slice the red onion into thin strips. Marinate tomatoes & red onion in a vinegary dressing. Toast the French bread until crunchy.

Cut the French bread into small squares.

Mix the marinated tomatoes, red onions and French bread in a medium size bowl.

Crumble the feta cheese on top.

Brie and Jam Sandwich

Ingredients:

  • Brie
  • Jam (I prefer raspberry, but many others work)
  • Two slices sourdough bread

Instructions:

  1. Put brie on a slice, and jam on the other.
  2. Put them together, butter the showing sides, and grill.
